How do I calculate dough hydration with baker's percentages?

Hydration is the water's baker's percentage. With 500 g flour and 325 g water, water shows as 65 percent. If the dough contains other liquids, add their percentages yourself, because each line is reported separately.

Can I use more than one type of flour?

Yes. Any ingredient whose name includes flour, in any letter case, counts toward the flour total. Name lines like Bread flour and Whole wheat flour so both are recognized and their combined weight equals 100 percent.

Why do I get an error about flour mass?

At least one line must have a name containing flour with a positive mass, and no mass can be negative. All masses must use one unit, such as grams, because percentages are calculated directly from the numbers.
